THE FOUNDER
Ali Darwish’s journey didn’t start with a business plan. It began at 16, in the hospitality trenches polishing cutlery, serving tables, learning how timing, service, and human emotions shape an experience.
He mastered the front-of-house first reading guests, anticipating needs, delivering service that feels effortless. Then he moved into the kitchen, not to cook, but to understand: production, preparation systems, discipline, standards, consistency.
He knew this truth: “You can’t lead excellence if you don’t understand the details.”
Driven by curiosity, he traveled across Europe, Asia, and the Middle East not to collect recipes, but to gather inspiration from cultures, flavors, techniques, and emotions.
